A great gluten-free dish!
Pre-heat oven to 375 degrees.
In pan, sauté onion in olive oil on medium heat until golden.
Add wine. Let simmer for 1-2 min.
Add mushrooms. Cook 3-5 min.
In a new pan, heat olive oil. Dip chicken in rice flour, fully covering both sides, and fry until desired brown. About 2 min. each side.
Put chicken in baking pan.
Sprinkle chopped parsley over chicken.
Add sauté mixture, including juices and oils to baking pan.
Sprinkle parmesan cheese (optional).
Cover with aluminum foil. Bake for 30 min.
Serve with Gluten-Free Pasta of your choice!
